Classic Scone

|英式原味司康|

一提到scone(司康)自然会想到传统英式小点心。回到2016的圣诞节,我们俩口到了一家英式风格的餐厅享用了传统英式下午茶。在英式下午茶里,以三层式装盛着各式各样的甜咸口味的小点心,由下到上,第一层放了咸口味的烟熏鲑鱼三明治及火腿全麦小餐包,第二层放的是传统英式scones(司康)搭配奶油和果酱,第三层放了各式各样甜口味的可爱小蛋糕。

在选茶方面,一般传统的英式下午茶都会采用最纯口味的茶。所以,我们选择了TWG伯爵茶当茶饮。另外,服务生会准备了一些方糖及牛奶,让客人自行决定要喝奶茶或纯品尝茶。

原味司康是英式茶点里的主角,它可以是甜的,也可以是咸的…甜咸两种口味都能让人感觉很棒。司康端上桌是热呼呼,外层微微酥脆而内层却是松软的口感,咬下一口都充满了浓郁的奶油结合面粉的香气,让人感到风味很棒。

|制作司康做法 & 食材|

食材:

低筋面粉-200克

高筋面粉-50克

无盐奶油-65克

全脂鲜奶-125毫升

原遮糖-30克

泡打粉-1又1/2tsp

海盐-1/4tsp

蛋黄-1粒 + 少许的鲜奶 (涮在司康表面)

做法:


1)面粉,糖和盐一起混合均匀,加入冰的奶油,用手将奶油与面粉撮合成松散的状态。

2)在面粉的中心挖个小洞,倒入鲜奶,以切割的方式慢慢将周围的面粉与鲜奶一起拌至无粉粒即可。

3)桌台上撒些面粉,将面团整型至圆形,厚度大约2.5cm即可。
*面团不需要结合的太均匀,

4)用圆形模具压出形状,排列在烤盘上,刷上薄薄一层的蛋黄奶水。 9 more words
