Stuffed Bell Peppers

This recipe was loosely based upon Martha Stewart’s “Tomatoes Stuffed with Corn & Black Beans” from the September 2012 issue of Everyday Food.

I was about to start making lunch and wanted to base it on Martha’s recipe (stuffing a bell pepper instead of a tomato) and paused to quickly check the protein, fat & GI values of the ingredients.   325 more words
