Get your ingredients ready! (Note: I made a double batch this time.)
Chop up all of your veggies ahead of time. I put each ingredient in its own bowl, this made it much easier to add them when it was their time.
I used a fine cheese grater to zest my lime and mixed it with my cilantro (I love cilantro so I added extra).
Having the beans rinsed, drained, and ready to go will save you time.
I used basmati rice in place of white rice. Each bag is about 2 cups of rice, which works perfectly for this recipe. (Note: Do not microwave the rice. Just add it directly out of the package.)
Cleaning and chopping up the chicken can be quite time consuming as well. Getting all of your ingredients prepared before you start cooking will be extremely helpful. It took me about 30 mins. of prep time.
After your olive oil is heated up, add your chicken bits. Stir them occasionally to help them cook evenly throughout each piece.
After about 5 minutes, add your white onion bits and minced garlic. Cook for another minute.
Add in chicken broth, green chilies, lime juice, green onion bits, and black beans. Season with salt and pepper, if desired. Bring mixture to a boil.
Once boiling, add your rice and bring to a boil again. Let rice boil for about 20 seconds, then remove from heat. Let sit for about 5-6 minutes (with the lid on).
My love for lemons doesn’t discriminate. I also have a fondness for limes, especially when partnered with cilantro. The combination of the two creates a fresh flavor that can be easily incorporated into almost any dish. 539 more words
