{Easy} Greek Chick Salad

Literally…no offense meant to anyone.  This is like a Greek salad made with beans as the base, instead of lettuce.  I got a pint of this at a farmers’ market here in town and it was so juicy and filling, my mouth was watering eating it, and my husband actually really liked it too (not a huge fan of salads unless there’s bacon and blue cheese involved)… and it’s relatively HEALTHY!   151 more words
